Well, that's why they have the new PowerMac 7500/120.. It's based on a 120 MHz PowerPC 604, and it has a couple of other advantages over the 7200: the video input of course, and the processor daughtercard for simple upgradability.
It's quite a cool machine, though right now, I'm considering something like a PowerMac 8500/120 (these are discontinued, and fairly cheap for what you get..)
